I posted a photo of these to Facebook and got many requests for the recipe. My mom will have to chime in here of where the recipe came from. I just know she has made these for all of my 40 years and they are one of my very favorites. The best part is that they are made from basic ingredients that you almost always have and they only take 20 minutes to bake.
Cinnamies
1/2 c butter
1 c brown sugar
1 egg
1 1/2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 c hot coffee
1 c chocolate chipsCream together the butter and sugar. Add the egg. Combine flour, cinnamon, baking powder & soda and add these dry ingredients alternately with the coffee. Spread into a greased 9×13 pan. Sprinkle the chocolate chips over the top. Bake at 350 degrees for 20 minutes.
Indeed, 40 years in the baking. Came from an old Farm Journal cookbook from the early 70s, under the category of “lunchbox treats”. Modified by me, given the well known “raisins in cookies is a dirty trick” opinion of certain family members (not to mention nuts in cookies). Anything that goes in a 9X13 pan is my friend and the 20 minute baking time is awesome by itself. Formally called Coffee-flavored Cookie Squares (boring), tagged Cinnamies because they are baked like my brownie recipe, so therefore Cinnamies. Logical in kidspeak. Sweet but not too sweet, coffee and cinnamon are a nice “warm” flavor combination, and chocolate because I had a handful of chocolate chips that needed a home.
